Soak 1 cup of dried chickpeas in water with 1 teaspoon of baking soda overnight.
Drain and rinse the soaked chickpeas.
Boil the chickpeas in water for about 30 minutes until soft, skimming off any foam that forms on top.
In a food processor, add the boiled chickpeas, 1 large clove of grated garlic, juice of 1 whole lemon, and 1/2 teaspoon of salt.
Add 3 ice cubes and 1/2 cup of tahini to the food processor.
Blend the mixture until smooth, checking the consistency.
Taste and adjust seasoning if necessary.
Transfer the hummus to a serving dish and garnish with fresh parsley and paprika.
Drizzle olive oil on top before serving.
