Welcome back to cooking with Kirby; today we're making steak picado.
Chop about 1 pound of chuck steak into small pieces.
Chop 1/2 medium onion and set aside.
Use 1 large garlic clove, or 2 small/medium, and set aside.
Chop 1/4 anaheim pepper (or any spicy chili) and set aside.
Chop 1 roma tomato and 1/2 sweet bell pepper, and set aside.
Chop some cilantro and set aside.
Prepare sides: suggest refried beans and corn tortillas.
Heat charcoal in a Weber Smokey Joe grill for cooking.
Spread out the coals, leaving a spot for the pan.
Place a cast iron skillet on the grill and add a little oil.
Once the oil is hot and sizzling, add the chopped chuck steak.
Season the beef with salt and a mixture of white and black pepper.
Let the beef cook for a couple of minutes without moving it to avoid sticking.
After a couple of minutes, mix the beef to brown the other side.
Add the chopped garlic to the skillet and mix it with the beef.
Let the beef and garlic sauté together.
Taste a piece of beef and adjust seasoning as needed.
Once the beef is browned on all sides, add the chopped onions and anaheim pepper.
Add the chopped tomatoes and stir everything together.
Add the chopped cilantro and bell pepper to the skillet.
If overcrowded, add some veggies to the refried beans instead.
Let the veggies sauté for a couple of minutes until soft and translucent.
Add the can of tomato sauce to the skillet and mix everything together.
Let the mixture simmer for a few minutes to thicken up.
Check for seasoning and adjust if necessary.
After a couple of minutes, the dish is ready to serve.
