In a medium-sized bowl, add 1/3 cup whole milk ricotta cheese, 1/2 cup crumbled feta cheese, 1/3 cup creamy havarti cheese, 1 large egg, a large pinch of salt, and a large pinch of black pepper.

Unroll the phyllo dough carefully, using 2 sheets per barreca, aiming for strips about 4 inches wide by 10 to 12 inches long.

Brush a thin layer of melted unsalted butter over the first sheet of phyllo dough.
