In a medium-sized bowl, add 1/3 cup whole milk ricotta cheese, 1/2 cup crumbled feta cheese, 1/3 cup creamy havarti cheese, 1 large egg, a large pinch of salt, and a large pinch of black pepper.
Mix the ingredients together thoroughly with a fork, breaking up larger pieces.
Allow the phyllo dough to defrost at room temperature for about 2 to 3 hours, keeping it covered to prevent drying out.
Unroll the phyllo dough carefully, using 2 sheets per barreca, aiming for strips about 4 inches wide by 10 to 12 inches long.
Brush a thin layer of melted unsalted butter over the first sheet of phyllo dough.
Place another sheet on top and brush another thin layer of melted unsalted butter on top of that.
Cut the phyllo sheets into strips if necessary, then add 1 tablespoon of the cheese filling at the bottom edge of one of the strips.
Fold a corner of the dough over the filling to create a triangle, then continue folding the triangle along the length of the strip until it is completely wrapped around the filling.
Repeat the folding process for the remaining filling and phyllo dough.
In a small bowl, whisk together 1 large egg yolk and 1 tablespoon of water to create an egg wash.
Brush a light layer of the egg wash onto each barreca and garnish with sesame seeds.
Bake the barrecas at 350°F (176°C) for about 18 to 20 minutes, or until golden brown.
Remove from the oven and let them cool for a few minutes before serving.
