Season 1.5 kg of beef cheeks with approximately 1 tablespoon of salt, mixing well to marinate the meat.

Prepare the red adobo by removing the stems and some seeds from 4 guajillo chiles and 2 pasilla chiles.

Boil the chiles in 4 cups of water over medium heat for about 10 minutes until softened.

In a blender, combine the cooled chiles with 3 garlic cloves, some pieces of red onion, 2 cloves, 1 tablespoon of salt, 1/2 tablespoon of black pepper, a pinch of marjoram, a pinch of thyme, 1 bay leaf, and 2 avocado leaves, and blend for about 3 minutes until smooth.

Add 3 liters of water to the pot with the beef, along with 4 bay leaves and 2 avocado leaves.

Pour the blended adobo over the meat and mix well, rinsing the blender with a bit of water to ensure all marinade is used.

Let the meat marinate in the refrigerator for about 2 to 3 hours, or preferably overnight.

Cook the meat on the stove over high heat for the first 5 minutes, then reduce the heat to low and cook for 3.5 hours.

After 3.5 hours, the beef should be tender; if you prefer, you can cook it over medium heat for about 2.5 hours instead.
