Start by preparing tamarind: take 200 grams of tamarind fruit and add 6 tablespoons of water to it.

Let the tamarind soak to extract the pulp and seeds, using a cheesecloth if available.

Add 20 grams of green chili (5 chilies with tops removed) to the blender.

Add 8 grams of chopped garlic to the blender.

Add 18 grams of fresh mint to the blender.

Blend the mixture, adding a touch of bottled water if necessary to help it blend smoothly.

Check the consistency and add salt to taste.

Add approximately 100 ml of water to achieve the desired consistency, blending again as needed.
