Wash the black-eyed beans with cold water.
Put the washed beans in a pan and cover them with cold water.
Bring the beans to a simmer and boil for about 10-15 minutes.
After 10 minutes, change the water when it turns dark.
Add fresh boiling water just enough to cover the beans.
Add a chicken stock cube (or vegetable stock cube for vegetarian).
Add courgettes and green beans to the pan.
Sprinkle with olive oil and add half a lemon to prevent browning.
Bring to a simmer and cook for about 5-10 minutes until the vegetables are tender.
Add wild rocket and season with salt and pepper, then mix.
Serve the dish either cold or hot, garnished with parsley.
