Rhubarb Sauce

4 cups rhubarb, chopped
1 cup sugar
1/2 cup water
1 tsp vanilla extract
1/4 tsp salt

Dice the rhubarb, lining up the ends to make it easier.

Add the diced rhubarb to a heavy bottom stainless steel stock pot.

Add 3/4 cup of sugar to the pot with the rhubarb and stir it in.

Let the mixture sit for a little while to allow the sugar to pull juice from the rhubarb.

Put the pot on the stove and cook at medium low to low temperature, stirring frequently to prevent sticking or burning.

Cook for about 20 minutes until the rhubarb breaks down into shreds, leaving some chunky pieces if desired.

At this point, you can either hot pack the sauce into jars and water bath can it for 15 minutes, or cool it down to keep in the fridge, or freeze it into containers.
