Rhubarb Sauce

4 cups rhubarb, chopped
1 cup sugar
1/2 cup water
1 tsp vanilla extract
1/4 tsp salt

Pick rhubarb that is 7 to 15 inches long.

Cut off the leaf and the bottom part of the rhubarb.

Dice the washed rhubarb into half inch to one inch pieces.

For every 2 cups of rhubarb, add 1/4 cup of white sugar.

Mix the sugar with the rhubarb and let it sit for 3 to 5 hours, stirring occasionally.

Add the rhubarb to a pot and put it on medium heat.

Stir occasionally until it starts to boil, then cook for an additional 30 seconds.

Prepare canning jars by keeping them warm in the dishwasher.

Leave about 1/4 inch space at the top of the jars before putting on the lid and canning ring.

Wipe off the rim of the jar with a wet cloth.

Process the jars in a canner at a rolling boil for 15 minutes.
