1

Remove the top of the pumpkin and scrape out the seeds.

2

Mince 5 cloves of garlic and mix with 100 milliliters of butter.

3

Spread the garlic butter around the inside and outside edges of the pumpkin.

4

Place the pumpkin in a preheated oven at 175 degrees Celsius for about 45 minutes to an hour, until a knife can go through easily.

5

In a Dutch oven over medium-high heat, add 60 milliliters of cooking oil.

6

Cube 800 grams of chuck roast into 1 to 2 centimeter cubes and brown half of the beef at a time, removing it once crispy and brown.

7

Add more oil if needed and brown the second half of the beef, then remove it.

8

Dice 1 onion and sweat it in the pot until translucent.

9

Return all the beef to the pot and dice 2 bell peppers, adding them to the mixture to sweat.

10

Cube 2 potatoes and peel and thinly slice 1 carrot, then add them to the pot.

11

Season with salt, black pepper, dried oregano, paprika, crushed red pepper, bay leaves, and a few pinches of sugar.

12

Dice 4 large tomatoes (or 6 medium) and add them to the pot.

13

Add 250 milliliters of long grain rice to the mixture.

14

Cover everything with 1 liter of water and cover the pot.

15

Let it simmer for about 15 to 20 minutes until the rice is done.

16

Husk corn and remove the kernels, then add them to the stew.

17

Once the pumpkin is ready, remove it from the oven and cube some mild melting cheese.

18

Layer cheese and stew alternately in the pumpkin, finishing with cheese on top.

19

Return the pumpkin to the oven under the broiler until the cheese crisps up.
