In a large mixing bowl, combine the ground pork, chopped cabbage, minced garlic, grated ginger, chopped green onions, soy sauce, sesame oil, sugar, salt, and black pepper. Mix the filling ingredients until well combined.

Take a gyoza wrapper and place about a teaspoon of filling in the center.

Moisten the edges of the wrapper with water using your fingertip. Fold the wrapper in half over the filling to create a half-moon shape, sealing the edges tightly by pressing or crimping them together. You can also pleat the edges for a decorative touch.

Repeat the process with the remaining wrappers and filling until all the dumplings are assembled.

Heat a tablespoon of oil in a large non-stick skillet or frying pan over medium-high heat. Place the gyoza dumplings in the skillet in a single layer, flat side down. Cook for about 2-3 minutes or until the bottoms are golden brown.

Once the bottoms are browned, carefully pour about 1/4 cup of water into the skillet and immediately cover it with a lid. Reduce the heat to medium-low and let the dumplings steam for about 5-7 minutes or until the water has evaporated.

Remove the lid and let the gyoza cook for an additional 1-2 minutes to crisp up the bottoms.

While the gyoza is cooking, prepare the dipping sauce. In a small bowl, mix together soy sauce, rice vinegar, sesame oil, and chili oil if using.

Serve the cooked gyoza dumplings hot with the dipping sauce on the side. Garnish with chopped green onions if desired.
