Reduce heat and add bay leaves, carrots, and potatoes.
Simmer for 20-25 minutes until vegetables are tender.
Stir in chopped tomatoes, lemon juice, and spices.
Cook for an additional 5 minutes to blend flavors.
Remove bay leaves before serving.
Garnish with fresh parsley before serving.
