Whole wheat noodles provide more fiber.

1

Cut one noodle cake in half, using about 1 lb for 1.5 orders.

2

Chop yellow chives into 1 inch lengths.

3

Soak 8 dried shiitake mushrooms in warm water for 30 minutes to 1 hour, then cut into thin strips.

4

Slice king oyster mushrooms into thin strips.

5

Cut carrot into thin strips, using a technique to keep it stable while cutting.

6

Peel, smash, and mince one clove of garlic.

7

Fill a deep and wide wok with boiling water to cook the noodles.

8

Add the noodles to the boiling water and cook for about 2 minutes until they are completely soft and separated.

9

Remove the noodles and place them in a strainer. Rinse with cold water if not stir-frying immediately.

10

Heat the wok for 15-30 seconds, then add 1 tbsp of oil and let it heat up for 30-40 seconds.

11

Add minced garlic to the hot oil and stir-fry for about 10 seconds until fragrant.

12

Add all the mushrooms and stir-fry for another 10 seconds.

13

Add the carrot strips and stir-fry for a bit longer.

14

After about 40-50 seconds of stir-frying, add 1.5 cups of hot water to the wok.

15

Let the ingredients boil in the water for about 1 minute before adding seasoning.

16

Turn off the heat and add 2 tsp of vegetarian oyster sauce, 1 tsp of light soy sauce, 1 tsp of dark soy sauce, 1 tsp of sugar, and 1/2 tsp of salt.

17

Turn the stove back on high and taste the sauce for flavor.

18

Add the cooked noodles to the wok and mix well to absorb the sauce.

19

Cook for 2.5 to 3 minutes until the noodles have absorbed all the sauce.

20

Add 1 tsp of sesame oil and a little more oil to make the noodles smooth and shiny before turning off the heat.

21

Add chopped yellow chives as a final garnish.
