Pour hot boiling water into a bowl to completely cover the raw unsalted pistachios and let them sit for 1 to 2 minutes.

Drain the water and place the pistachios on a clean kitchen towel.

Rub the pistachios against the kitchen towel to remove the brown skins, leaving some skins on for color.

Place the skinless pistachios into a food processor.

Add 2 tablespoons of water to the food processor with the pistachios.

Process the pistachios for about a minute, then scrape down the sides.

Add another tablespoon of water to achieve a smoother texture, mixing until desired consistency is reached.

If needed, add an additional tablespoon of water for a smoother paste.
