Wash and trim the bodi, cutting them into 2-inch pieces.
In a large pan, heat the vegetable oil over medium heat.
Add the chopped onion, garlic, and ginger to the pan and sauté until the onion is translucent.
Stir in the turmeric, cumin, black pepper, salt, and cayenne pepper, cooking for another minute to release the spices' flavors.
Add the bodi to the pan and stir to coat them in the spice mixture.
Pour in the water and soy sauce (if using), then cover the pan and let it simmer for about 15-20 minutes until the bodi are tender.
Remove the lid and cook for an additional 5 minutes to allow excess liquid to evaporate.
