Open-Faced Grilled Chicken Bruschetta Sandwich

½ cup chopped tomatoes
1 clove garlic, minced
1 tsp. fresh chopped basil
2 tsp. olive oil, divided
1 whole wheat sub/hoagie roll
4 oz. grilled chicken, cubed or shredded
2 slices mozzarella cheese, part skim
1 tsp. balsamic glaze

Mix tomatoes, garlic, basil and 1 teaspoon of olive oil. Set aside

Separate the roll and brush each half with the remaining olive oil.

Place the roll in the oven. Set to broil to toast slightly.

Top each half of the roll with chicken and a slice of cheese. Broil in the oven until the cheese has melted.

Top each half with the tomato mixture and a drizzle of balsamic glaze. Serve open-faced.
