Blanch the green beans in boiling water for 2-3 minutes.
Roughly chop 3 cloves of garlic.
Prepare the minced pork with about 1 tablespoon of light soy sauce and 1 teaspoon of sesame oil, mixing well.
Prepare the stir fry sauce with Dolan Jang, dark soy sauce, a pinch of sugar, and some water from soaked dried chilies.
Heat the wok and start by stir frying the minced pork until cooked through and separated into small bits.
Transfer the cooked minced pork to a clean bowl to start fresh for the stir fry.
Add more oil to the wok, then add the garlic and dry red chilies to stir fry quickly.
Add the preserved mustard greens and the cooked minced pork back into the wok.
Add the blanched green beans to the wok and let them sear on high heat, building up smoke around the wok.
Pour in the stir fry sauce and fold everything together until well combined.
