Italian-Style Zesty Chicken

Take the backbone out of the chicken.
Prepare a marinade with fresh parsley, lots of lemon juice, crushed red pepper, thyme, rosemary, garlic, orange zest, lemon zest, and good olive oil.
Put the marinade over the chicken and refrigerate overnight.
When ready to cook, ensure the skin is crispy and season with fresh pepper.
Use two hot bricks to press the chicken while cooking.
Cook the chicken until it reaches an internal temperature of 160°F.
After cooking, remove the bricks and brush the chicken with herbs.
Serve the chicken with beautiful tomatoes and onions, adding a few slices of lemon and some rosemary.
