Flaounes are a traditional Cypriot pastry, often enjoyed during Easter celebrations. These savory cheese pies symbolize abundance and are filled with a mixture of cheeses and herbs, reflecting the island's rich culinary heritage. Today, flaounes are cherished not just during holidays but also as a delightful snack or appetizer throughout the year.
Add cypriot village flour to a bowl.
Add 1 teaspoon of mehlep, 1 teaspoon of mastic, and 1 teaspoon of cinnamon to the flour.
Add a bit of salt and baking powder to the mixture.
Incorporate yogurt and milk to bind the dough.
Chop fresh mint and add it to the filling mixture.
Add 1 cup of cheddar cheese, 1 cup of halloumi cheese, 1 cup of semolina, and 1 cup of raisins to the filling.
Add spices to the filling mixture, including mastic and mehlep.
Add yeast to the filling mixture.
Incorporate 5 beaten eggs into the filling mixture for richness.
Mix the filling well, using hands to combine thoroughly.
Roll out the dough thinly and cut into circles.
Press the circles into dampened sesame seeds.
Add a tablespoon of the filling mixture to the center of each circle.
Fold the dough over the filling to form squares, leaving a small hole on top.
Brush the tops with egg wash and sprinkle sesame seeds on top.
Bake in the oven until golden.
