Flaounes are a traditional Cypriot pastry, often enjoyed during Easter celebrations. These savory cheese pies symbolize abundance and are filled with a mixture of cheeses and herbs, reflecting the island's rich culinary heritage. Today, flaounes are cherished not just during holidays but also as a delightful snack or appetizer throughout the year.

Preheat the oven to 375°F (190°C).
In a bowl, mix flour, yeast, and baking powder.
In a separate bowl, combine warm water, olive oil, and salt.
Gradually add the wet mixture to the dry ingredients, mixing until a dough forms.
Knead the dough on a floured surface until smooth, about 5-7 minutes.
Cover the dough with a cloth and let it rise in a warm place for 1 hour.
In another bowl, crumble feta and kefalotyri cheese.
Add chopped mint, parsley, eggs, cinnamon, and pepper to the cheese mixture.
Once the dough has risen, divide it into equal portions.
Roll each portion into a circle about 1/4 inch thick.
Place a generous spoonful of the cheese mixture in the center of each circle.
Fold the edges over the filling to form a triangle or a pocket.
Brush the tops with milk and sprinkle black sesame seeds.
Place the flaounes on a baking sheet lined with parchment paper.
Bake in the preheated oven for 25-30 minutes, until golden brown.
Remove from the oven and let cool slightly before serving.
