Start with a hot day and the desire to make ice cream sandwiches.
Mention using store-bought ingredients or homemade ice cream.
Decide to make chocolate sandwich cookies and chocolate chip cookie sandwiches.
Combine 1/4 cup plus 3 big spoons of sugar with 3 big spoons of melted butter in a mixing bowl.
Add 1/2 little spoon of vanilla and 5/8 cup of whole milk to the mixture.
Incorporate 1/8 little spoon of salt and 1/2 little spoon of baking powder into the mixture.
Stir in 3 big spoons of cocoa powder, folding it in carefully.
Add 1/2 cup (60 grams) of all-purpose flour to the mixture and mix until just combined, leaving some lumps.
Use buttermilk instead of regular milk, if desired.
Pour the batter into a lined bread pan and bake at 350°F (180°C) for 15 minutes, checking with a toothpick.
If the toothpick comes out dirty, bake for an additional 3 minutes, totaling 18 minutes.
Let the chocolate cake cool completely before slicing it lengthwise to fit ice cream in the middle.
Use homemade devil's food ice cream to fill the cake.
If ice cream is too hard, let it sit out for a couple of minutes before filling.
Press the ice cream down and cover with parchment paper, then freeze to firm up.
For the vanilla bean ice cream version, repeat the process with a few tweaks: use 1/2 little spoon of almond extract and 1 big spoon of molasses.
Mix in a handful of chopped chocolate chips instead of whole ones.
Line a baking sheet with parchment paper and pour the batter, spreading it thin.
Bake at the same temperature for around 15 minutes, checking at 12 minutes.
Once baked, stamp out cookie shapes using ring molds or any desired shape.
