1 pkg. Tofu Firm
2 Tbsp. soy sauce
2 tsp. rice vinegar
2 Tbsp. sesame oil
2 tsp. sesame seeds
1 garlic clove, minced
1-inch knob fresh ginger, minced
2 scallions, chopped
2 tbsp furikake or seaweed flakes
1 avocado
2 cups cooked rice
Veggies of choice, thinly chopped (I used carrots, cabbage, cucumbers and sea asparagus)

Drain and dry the block of tofu with paper towels. Wrap the block of tofu in a thick layer of paper towels and place on a plate. Lay another flat-bottomed plate (or small cutting board) on top of the tofu and place a can or two of beans on the plate/cutting board to weigh down the tofu. Let sit for 30 minutes.

Cut the tofu into ½-inch cubes.

In a medium bowl, whisk the soy sauce, rice vinegar, sesame oil, sesame seeds, garlic, ginger, and scallions. Add the tofu and toss gently to coat. Cover and let the tofu marinate for 30 minutes.

To serve, add to a sushi roll or rice bowl with fresh veggies. Top with vegan spicy mayo or soy sauce and enjoy.
