Wash celery, beetroot, onion, and carrots thoroughly under running water with vinegar, lemon juice, and salt.
Cut washed vegetables into pieces.
In a pan, add carrots, celery, beetroot, and onion with a little bit of water to start steaming.
Steam vegetables for 3 minutes, stirring gently.
Add vegetable oil to the pan and fry the vegetables until translucent, about 7-8 minutes, adjusting time based on the amount of vegetables.
Let the vegetables cool down and then transfer them into a blender.
Blend the cooled vegetables until smooth.
Add sautéed red bell peppers to the blender and mix everything together.
Cover the mixture and cook for an additional 15 minutes until the water is mostly dried out and the consistency is to your liking.
Allow the mixture to cool down completely, stirring occasionally to speed up the cooling process.
Transfer the vegetable paste into sterilized glass jars for storage.
Steam the jars with the vegetable paste for another 20 minutes to preserve it without refrigeration.
