2 tablespoons butter
2 cups potatoes, diced
2 cups carrots, sliced
1 medium red onion, chopped
1 medium bell pepper, chopped
4 cloves fresh garlic, minced
2 teaspoons thyme
1 scotch bonnet pepper, whole
