Welcome to the countdown to Christmas and we're making gingerbread cake.
Start with 3 cups of all-purpose flour.
Add 2 1/2 teaspoons of baking powder, 1/2 teaspoon of baking soda, 1 teaspoon of cinnamon, 2 teaspoons of ground ginger, 1/2 teaspoon of all spice, 1/4 teaspoon of nutmeg, 1/2 teaspoon of ground cloves, and 3/4 teaspoon of salt to the flour and mix together.
In a separate bowl, heat 1 cup of buttermilk and 1 cup of molasses in the microwave for about 30-40 seconds.
Add the warmed buttermilk and molasses to the mixing bowl.
Add 3/4 cup of melted butter (1 and 1/2 sticks), 1 cup of sugar, 2 eggs, and 1 tablespoon of vanilla extract to the wet ingredients and mix well.
Scrape the bowl to ensure everything is combined.
Pour the batter into a pre-greased 9x13 cake pan.
Bake in a preheated oven at 350°F for 30-35 minutes, checking at 25 minutes to prevent overbaking.
After baking, dust the cake with powdered sugar and serve with Cool Whip or Ready Whip.
