Vegetable broth maintains flavor while apple cider vinegar offers acidity at a lower cost.
Slice the onions into desired shapes and sizes.
Heat a pot over medium-high heat and add 1.5 tablespoons of butter and some coconut oil.
Once the butter and oil are melted, add the sliced onions to the pot.
Reduce heat to medium and add salt to help draw moisture out of the onions.
Add a lot of garlic to the onions and stir to mix everything together.
Cook the onions for about 30 to 45 minutes, stirring occasionally, until they caramelize.
After 10 minutes, check the onions; they should have reduced significantly but not yet caramelized.
After 20 minutes, check again; the onions should still have moisture and not be browned.
After 30 minutes, the onions should start to color and thicken up.
After about 5 more minutes, the onions should be darkened and thickened, with brown bits coming off the bottom of the pot.
Add a little vinegar for flavor and freshly ground black pepper.
Add 2 cups of vegetable broth to the pot, along with Worcestershire sauce for added flavor.
Bring the mixture to a bubble, then reduce heat to low and cover to let it simmer.
Prepare bread by cutting it into smaller crouton shapes and toasting it.
Toast the croutons in the oven under the broiler until golden and crispy, about 4 minutes.
Fill an oven-safe bowl with the onion soup, place the toasted croutons on top, and generously add cheese over the croutons.
Broil the bowl of soup until the cheese is bubbly and golden.
