1

Start by making the marinade in a blender with 1 bunch of cilantro, 1 bunch of green onion, 1 onion cut in half, and 1 clove of garlic.

2

Blend the ingredients until mixed well.

3

Add 3 chipotle peppers in adobo sauce, 2 packages of sazon, 1 tablespoon of salt, and 0.5 tablespoon of oregano to the blender and blend again.

4

Pour the marinade over 3 kilograms of pork (pork chauvel) in a bowl.

5

Squeeze the juice of 2 oranges and 2 limes into the pork and marinade.

6

Massage the marinade into the pork thoroughly and then cover it and refrigerate for 24 hours.

7

After 24 hours, place the marinated pork into a pressure cooker.

8

Saute the pork in the pressure cooker for about 5 minutes until it looks well cooked.

9

Lock the pressure cooker and cook for 15 minutes.

10

Once cooked, let the pork cool and then shred it using clean gloves.

11

Microwave corn tortillas to soften them.

12

Place some shredded pork and cheese onto each tortilla and roll them up tightly.

13

Deep fry the rolled taquitos until crispy all around.

14

Prepare a green sauce by blending 2 ripe avocados with green Mexican sauce (tamatillos with seasonings).
