ground beef

🥗Healthier: ground turkey

💰Cheaper: ground pork

Ground turkey is leaner while ground pork can be more economical.

cheddar cheese

🥗Healthier: reduced-fat cheese

💰Cheaper: monterey jack cheese

Reduced-fat cheese lowers calories, while Monterey Jack is often less expensive.

1

Brown 1 pound of ground beef over medium heat until no longer pink, chopping as you go.

2

Drain excess fat, leaving about a tablespoon in the pan.

3

Add rinsed and drained basmati rice to the pan, stirring for 1-2 minutes to coat the rice with the meat fat.

4

Pour in beef broth (or chicken/vegetable broth), a small can of diced tomatoes with juices, and salsa. Optionally add chili sauce or taco sauce.

5

Turn the heat up to bring the mixture to a simmer, tossing everything together.

6

Add diced onions, bell peppers, and half of a seeded jalapeno to the pan, along with a small can of green chillies. Mix well.

7

Sprinkle in garlic powder, onion powder, chili powder, cumin, oregano, salt, and black pepper. Stir to combine.

8

Add corn and give everything one last stir.

9

Once simmering, turn the heat down to the lowest setting, cover, and cook for 20 minutes without lifting the cover or stirring.

10

After 20 minutes, turn off the heat and let it rest for 10 minutes, still covered.

11

After 10 minutes, uncover and fluff the mixture with a fork.

12

Sprinkle cheese and green onions on top, cover for 1 minute until cheese melts.
