Return the chicken to the pot and mix with the tomato mixture.
Cover and let cook for a few minutes to mingle flavors.
Add carrots and peppers, season with salt and pepper, and let sweat slightly.
Pour in 2 cups of chicken stock and additional water to cover the chicken.
Bring to a boil, then cover and cook for 20-30 minutes.
Add diced potatoes and cover to cook until soft.
Finally, add zucchini and cilantro, season with salt and pepper, and steam for 5 minutes.
