Kung Pao Noodles

1/2 cup water
3 tbsp corn flour
2 tbsp vinegar
2 tbsp dark soy sauce
2 tbsp light soy sauce
1 tbsp sugar
2 tbsp oil
2 tbsp ginger (julienne)
1 tbsp garlic (chopped)
1 cup capsicum (cubes)
2 tbsp onion (julienne)
cooked chicken
1/2 cup dried red whole chilies
3 jalapenos
2 cups chicken stock
kung pao sauce
1/2 cup roasted peanuts
boiled spaghetti

Cook the egg noodles according to package instructions, then drain and set aside.

In a large skillet or wok, heat the vegetable oil over medium-high heat.

Add the diced chicken breast to the skillet and cook until browned and cooked through, about 5-7 minutes.

Add the bell peppers, zucchini, garlic, and ginger to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender.

In a small bowl, mix together the soy sauce, rice vinegar, hoisin sauce, sesame oil, red pepper flakes, and salt.

Add the cooked noodles to the skillet along with the sauce mixture. Toss everything together until well combined and heated through, about 2-3 minutes.

Stir in the roasted peanuts and chopped green onions, mixing well.

Remove from heat and serve hot.
