1 tbsp lemon juice
chopped coriander

4 tbsp vegetable oil

Make small cuts in the eggplant & insert sliced garlic in the eggplant.

Brush eggplants with oil.

Roast eggplants over high flame (on charcoal for better flavour) until they turn soft.

Remove outer skin (leave some for smoky flavour).

Chop cooked eggplants until they turn into a paste.

Add in chopped onions, sliced chillies, lemon juice, salt, pepper and chopped coriander and set aside.

In a pan, heat some oil and temper chilli 1 dried chilli in oil.

Break down and mix chilli into the paste.

Pour hot oil on the paste and mix well until fully combined.

Garnish with fresh coriander.
