Otai

Cultural Context

Otai is a refreshing fruit drink originating from the islands of the Pacific, particularly popular in Samoa and other Polynesian cultures. Traditionally enjoyed during gatherings and celebrations, it showcases the abundance of tropical fruits and coconut. Today, Otai has gained popularity beyond its origins, often found in various tropical regions and enjoyed for its vibrant flavors and cooling properties.

4 servings
Servings4
4 cups watermelon, cubed
2 cups pineapple, chopped
1 cup coconut milk
1/2 cup sugar
1/4 cup lime juice
1 teaspoon salt
4 cups ice

Quantities are estimated based on standard recipes for your convenience. The actual ingredients used in this video are accurate.

1

Slice up the watermelon and grate it Tongan style.

2

Add juicy pineapple to the grated watermelon.

3

Put a little bit of coconut in for flavor, just enough not to overpower the watermelon.

4

Add sugar, but for a healthier version, you can skip it.

5

Add huaka (milk) to change it up since coconut milk is not readily available in New Zealand.

6

Prepare a glass rimmed with coconut and vanilla ice cream.

7

Add ice cream to the glass, as many Tongans prefer their aai with ice cream instead of ice.

8

Break the cabin bread and place it on top as a garnish, which can also be used as a spoon.
