Chicken Pomodoro Zucchini Pasta

2 medium zucchinis
1 lb boneless, skinless chicken breast
2 cups cherry tomatoes, halved
3 cloves garlic, minced
1/4 cup fresh basil, chopped
1/4 cup grated Parmesan cheese
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp red pepper flakes (optional)

Spiralize the zucchinis to create zucchini noodles and set aside.

In a large skillet, heat olive oil over medium heat.

Season the chicken breasts with salt, pepper, and red pepper flakes (if using).

Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until fully cooked.

Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.
