Add flour to a mixing bowl.
Boil water, then add a little bit of oil and salt to it.
Pour the boiling water mixture over the flour.
Combine the mixture using a standing mixer or by hand, waiting until it cools down if needed.
Cover the dough and let it rest for 20 minutes to relax the gluten.
Mix the dough for another 10 minutes until it is soft and pliable.
Cover the dough with a clean cloth and set aside.
Prepare the filling by using ready-made mashed potatoes or boiling potatoes and pressing them to cool down.
Add ricotta cheese to the mashed potatoes and combine until smooth.
Cut bacon into pieces and fry in a pan over low heat until it starts to cook.
Increase the heat and add roughly chopped onion, cooking until the onion is fully cooked.
Take the filling off the heat once done.
Cut a piece of dough and cover the rest with cling film to prevent drying out.
Roll the dough out until thin, using a rolling pin or a pasta maker.
Use a cookie cutter or dumpling device to cut circles from the dough.
Place a spoonful of filling on each circle and wet one side of the dough to help seal.
Press the dough together using a dumpling device or by hand to seal.
Bring water to a boil, adding a little salt.
Add the pierogi to the boiling water one by one, cooking them for around 2 minutes after they float to the top.
Serve the pierogi topped with the fried bacon and onion, and garnish with spring onion.
