Boil potatoes until tender, about 15-20 minutes.
Drain potatoes and mash until smooth.
Mix flour, egg, and salt in a bowl to form a dough.
Add water gradually until the dough is smooth and elastic.
Roll out the dough on a floured surface to about 1/8 inch thick.
Cut circles from the dough using a glass or cutter.
Place a spoonful of mashed potatoes and cheese mixture in the center of each circle.
Fold the dough over to create a half-moon shape and seal the edges.
Boil pierogies in salted water until they float, about 3-5 minutes.
Remove and drain the pierogies.
In a skillet, melt butter and sauté onions until golden.
Add boiled pierogies to the skillet and pan-fry until crispy, about 3-4 minutes per side.
Serve hot with sour cream and chives.
