Start by heating avocado oil in a heavy bottom pot.
Add chopped onions and cover to let them cook until caramelized.
Add store-bought shredded carrots to the onions and cover to steam for a few minutes.
Soak dried tart cherries, golden raisins, and apricots in hot water to rehydrate them.
Once the onions and carrots are softened, add the rehydrated dried fruits to the pot.
Add more avocado oil and salt, then sauté the mixture for a few minutes.
Mix orange marmalade with hot water to create a sweet sauce and add it to the sautéed mixture.
Combine the slivered almonds and pistachios soaked in rose water with the rest of the mixture.
Prepare the basmati rice by par boiling it and layering saffron tadique at the bottom of the pot, then adding the rice on top.
Cover the pot and cook on low heat for about 45 minutes to steam the rice.
Use a tea towel or paper towel under the lid to catch steam and create a crispy tadik on the bottom of the rice.
After cooking, invert the pot to serve the rice with the jeweled mixture on top.
