Cut the rolled steak into four even pieces and place them on a metal skewer.
Soak the plank in water for an hour.
Sear the skewers over hot charcoal for a few seconds.
Place the skewers on the plank and let them smoke for 20 minutes or until they reach 52 degrees Celsius.
Remove the rolls from the plank and give them a quick sear on all sides.
Let the rolls rest for five minutes before slicing.
