Focaccia, originating from ancient Rome, was traditionally baked in the ashes of the hearth and served as a staple for Roman soldiers. This versatile bread is often enjoyed with meals or as a snack, showcasing the simplicity of Italian cuisine. Today, focaccia is celebrated worldwide, with countless variations featuring different toppings, reflecting local tastes and ingredients.

Add 7 grams of dry active yeast to 400 grams of warm water and mix.
Add 1 tablespoon of honey to the yeast mixture and mix in, then set aside for around 5 minutes until frothy.
Season 500 grams of strong white bread flour with 15 grams of salt and mix the salt in.
Add the yeasty water to the flour and mix until it comes together, noting that it will be a very wet dough.
Add 2 tablespoons of extra virgin olive oil to the dough and mix until combined.
Cover the dough with cling film and a rag, and proof in a warm place for 20 minutes.
Perform a pull and fold technique with a spoon for about 1 minute, lifting and folding the dough onto itself at four points (top, bottom, left, right).
Cover the dough and proof for 1 hour.
After 1 hour, check for bubbles in the dough, indicating it's ready.
Use generously oiled hands to repeat the pull and fold technique for about 1 to 1.5 minutes.
Transfer the dough to a well-oiled baking tray and cover for a final proof of 30 minutes.
After 30 minutes, oil hands again and poke the dough to create pockets and bubbles.
Drizzle the dough with extra virgin olive oil soaked in fresh thyme and sprinkle with flaky sea salt.
Add any additional toppings as desired (e.g., Harissa, red onions, olives, rosemary, tomatoes).
Bake in the oven at 200 degrees Celsius for around 15 minutes until crispy.
Rest the focaccia for at least 15 to 30 minutes before serving.
