Make the crumble by mixing 1 cup sliced almonds, 1/3 cup oats, 1 1/2 teaspoons maple syrup, and 1 1/2 tablespoons melted butter until coated.
Toast the crumble in a pan over medium-low heat, stirring until lightly fragrant.
Remove the crumble from heat and spread it out on parchment paper to dry and maintain crunch.
Preheat the oven to 225°F and place an empty 9x13 pan inside to keep the French toast warm.
In a bowl, combine 3 egg yolks, 2 eggs, and 1 cup half and half.
Add 2 tablespoons vanilla, 2 tablespoons sugar, and 1/2 teaspoon salt to the egg mixture and whisk until well combined.
Melt 1/2 tablespoon of butter in a pan over medium-low heat.
Quickly dip each slice of brioche in the custard mixture, ensuring not to soak too long.
Fry the dipped brioche in the pan until golden brown on both sides.
Serve the French toast with syrup, powdered sugar, crumble, berries, and whipped cream.
