Steam the pumpkin until completely soft.
Cook the rice in water until fully cooked.
Fry the chopped onion in olive oil for 2-3 minutes.
Add the chopped carrot to the onions and fry for another 2-3 minutes.
In a bowl, combine the boiled chickpeas, steamed pumpkin, fried onion and carrot mixture.
Add chickpea flour, ground flax seeds, marjoram, dried garlic, salt, and freshly ground pepper to the mixture.
Form small balls with the mixture, wetting your hands with water to make shaping easier.
Bake the balls for 25-30 minutes at 180°C (356°F).
Serve with natural yogurt or plant-based yogurt, Dijon mustard, and garnish with fresh parsley and mint.
