1 white or yellow onion, diced

1 cup red lentils, rinsed
3 cups filtered water
2 tablespoons vegan worcestershire sauce
2 tablespoons maple syrup
2 tablespoons apple cider vinegar (ACV)
1 28-ounce can fire roasted crushed tomatoes
2/3 cup vegan mayo

1 tablespoon dijon mustard
2 teaspoons organic cane sugar
1 teaspoon celery salt
fresh ground pepper to taste
shredded green cabbage
shredded red cabbage
shredded carrots
toasted sourdough buns

Set the Instant Pot to sauté and add a few tablespoons of water to heat up.

Add 1 diced onion, 1 diced bell pepper, and 1 diced poblano pepper to the pot.

Add 1 teaspoon of salt and mix to combine, then let sweat for 4-5 minutes until onions are translucent.

Add 1 tablespoon of ground cumin and 1 teaspoon of dried oregano, mixing to combine.

Stir in 3 tablespoons of tomato paste until combined.

Turn off the Instant Pot and add 1 cup of rinsed green or brown lentils and 1 cup of rinsed red lentils.

Pour in 3 cups of filtered water and stir to combine.

Add 2 tablespoons of vegan worcestershire sauce, 2 tablespoons of maple syrup, and 2 tablespoons of apple cider vinegar, stirring well.

Add a 28-ounce can of fire roasted crushed tomatoes without stirring, then cover and set to manual high pressure cooking for 13 minutes.

After cooking, let the steam release naturally before opening the pot and stirring the mixture.

For the coleslaw, in a small bowl, mix 2/3 cup of vegan mayo, 2 tablespoons of apple cider vinegar, 1 tablespoon of dijon mustard, 2 teaspoons of organic cane sugar, 1 teaspoon of celery salt, and fresh ground pepper to taste.

In a larger bowl, combine shredded green cabbage, shredded red cabbage, and shredded carrots, then add the dressing and fold to combine.

Toast sourdough buns and spoon the sloppy joe mixture on top, followed by the coleslaw.
