1 pound ground lamb
1 tablespoon olive oil
1 chopped red onion

1 teaspoon dried oregano
1/2 cup ketchup
1/2 cup tomato sauce
1 tablespoon brown sugar
1/2 cup crumbled feta cheese
fresh spinach
sliced tomatoes
sliced red onions

1 cup Greek yogurt
1 finely chopped peeled and seeded cucumber
1 clove minced garlic
1 teaspoon lemon zest
1 tablespoon lemon juice

Start by making the tzatziki sauce: mix Greek yogurt with finely chopped peeled, seeded, salted, and drained cucumber.

Add minced garlic, lemon zest, lemon juice, a pinch of salt, and fresh dill to the yogurt mixture.

Mix well and refrigerate the tzatziki sauce for a couple of hours before serving.

In a medium heat pan, add olive oil and 1 pound of ground lamb.

Add chopped red onion to the pan and cook, chopping up the lamb and stirring to mix.

Add finely chopped Pepperocini peppers (or bell peppers if preferred) to the mixture.

Add minced garlic, salt, and black pepper and cook for 3 to 5 minutes until the ground lamb is browned.

Add dried oregano to the pan.

Stir in ketchup, tomato sauce, and brown sugar for sweetness.

Let the mixture simmer for about 5 minutes or until some of the liquid is absorbed, then turn off the heat.

Stir in crumbled feta cheese lightly until combined.

Serve the Greek sloppy joes with fresh spinach, sliced tomatoes, and sliced red onions on buns or in pita pockets, topped with tzatziki sauce.
