Yuca al Mojo de Ajo

2 Yuca
2 tablespoons of salt
Water
½ vegetable oil
1 Onion
2 tablespoons of Garlic
1 tablespoon of Oregano
2 lemon
½ cup of apple vinegar
Olive Oil

Cut the yuca for easier peeling, then cut pieces in halves.

Place them in a Pan with Water, enough to cover them.

Once the Yuca start getting tender, add 2 tbsp of Salt.

If it is getting too dry, add more water (a cup).

Boil the Yuca for about 5 more minutes and it's done.

Drain the water out, to avoid overcooking.

Start frying the onions in a pan.

Add Garlic and Oregano after a few minutes.

Mix them all together.

Add the squeeze Lemon Juice.

Add the Vinegar and cook together for a few minutes.

Once ready, pour the mixture on top of the Yuca.
