Yuca al Mojo de Ajo

2 lbs yuca
several cloves of garlic
1 onion
1 lb longaniza
2 pieces of lemon
salt to taste
olive oil
bell pepper (aji morrón)
cilantro or verdura (optional)
1 chicken bouillon cube

Bring a pot of water to a boil.

Add 1 chicken bouillon cube to the boiling water.

Cut the yuca into edible pieces and add to the boiling water.

Boil the yuca for approximately 20 minutes.

Remove the yuca from the water after boiling.

Chop the onion, bell pepper, garlic, and cilantro (or verdura) while the yuca is boiling.

In a hot skillet, add a little olive oil over medium heat.

Sauté the chopped vegetables for about 3 to 4 minutes on low heat to avoid burning.

After about 1.5 minutes, squeeze half a lemon into the skillet.

Add a little salt to taste and cover the skillet for about 2 more minutes on low heat.

Place the boiled yuca in a bowl and pour the sautéed vegetable mixture over it.

Mix the yuca and vegetable mixture with a spoon or ladle.

Add chopped cilantro (or verdura) to the yuca and mix until well combined.

Fry the longaniza in a separate pan until cooked.
