Yuca al Mojo de Ajo

2 lbs yuca (cassava)
1/2 cup olive oil
6 cloves garlic, minced
1/4 cup fresh lime juice
1 tsp salt
1/2 tsp black pepper
1/4 cup fresh cilantro, chopped

Peel the yuca and cut it into 2-inch pieces.

In a large pot, bring salted water to a boil and add the yuca pieces.

Cook the yuca for about 20-25 minutes, or until tender. Drain and set aside.
