1

Start by preparing the spices: take 1 piece of star anise, 1 bay leaf, 4 to 5 cloves, 4 to 5 green cardamom pods, a 5 cm piece of cinnamon, 6 black peppercorns, and a small piece of ginger.

2

Roast the spices in a small pot until a pleasant spice smell emerges, being careful not to over-roast them to avoid bitterness.

3

Transfer the roasted spices to a mortar and grind them until they break down into smaller pieces, but not too fine since they will be sieved later.

4

Put the ground spices back into the small pot and add 250 ml of water. Bring the water to a boil.

5

Once boiling, remove from heat and add 1 bag of black tea. Let it steep for 3 to 5 minutes, depending on your taste.

6

After steeping, add 250 ml of milk to the tea and spices to enhance the flavor further.

7

Pour the masala chai through a fine sieve to remove the spices, leaving the flavored liquid for the coffee mix.

8

In a small bowl, combine 2 tablespoons of instant coffee, 2 tablespoons of sugar, and 2 tablespoons of hot water.

9

Use an electric mixer to whip the coffee mixture until creamy. Alternatively, use a hand whisk if preferred.

10

Fill a cup with the masala chai, leaving some space at the top, and add the whipped coffee cream as a topping.
