Musakhan, a traditional Palestinian dish, hails from the West Bank and is often served during special occasions and gatherings. It features tender chicken seasoned with sumac, layered over flatbread, and garnished with toasted pine nuts. This dish embodies the warmth of Palestinian hospitality and is a symbol of cultural identity. Today, Musakhan is celebrated in various forms across the Middle East, with each region adding its unique twist.

Cut the whole chicken and soak it in water with vinegar and salt for 30 minutes.
Mix spices: black pepper, seven spices, cinnamon, nutmeg, cloves, cardamom, and salt in a plate.
Put minced garlic over the chicken, ensuring it reaches all parts.
Rub the mixed spices all over the chicken, covering it completely.
Squeeze the juice of a whole lemon over the chicken and let it marinate for 30 minutes.
Turn on the heat to high and add corn oil to a skillet.
Add one sliced onion to the skillet and sauté for 2 to 3 minutes.
Add the marinated chicken to the skillet with the sautéed onion and spices, mixing well.
Pour one cup of water into the skillet without pouring it directly over the chicken.
Cover the skillet and let the chicken cook.
In another skillet, turn on the heat to high and add olive oil and two sliced onions.
Sauté the onions until lightly browned, then lower the heat and cover them.
Transfer the cooked chicken to a baking dish, placing it facing up.
Broil the chicken in the oven for about 5 minutes until it is slightly crispy.
Cut the tanur bread into eight pieces and soak them in water with spices.
Add the sautéed onions over the soaked bread, covering it completely.
Sprinkle sumac over the bread and place the chicken on top.
Garnish with almonds and serve.
