Begin by boiling 1.5 kg of chicken thighs and drumsticks in a large pot with 2.5 liters of water, a couple of bay leaves, black pepper, salt, and a bit of cinnamon until soft and moist.

In a non-stick pan over medium-high heat, add 50-70 ml of Greek olive oil and sauté 10 cloves of garlic for a couple of minutes until just before it starts changing color.

Add the sliced onions to the pan and sauté for about 15 minutes until they are soft and caramelized.

Stir in 100 g of sumac and mix well, then add the juice of 3-4 lemons.

Once the chicken is cooked, remove it from the pot, clean it, and cut it into small pieces.

In a baking tray, mix the chicken pieces with the sautéed onions and distribute them evenly.

Cut 250 g of phyllo dough into 1.5 cm rings and mix it with 30-40 ml of Greek olive oil by hand.

Take bits of the phyllo dough mixture and tuck them within the chicken and onions, ensuring some phyllo is exposed to get crunchy.

Sprinkle the top with additional Greek olive oil and bake at 185-190°C for about 45 minutes.

After 45 minutes, remove from the oven and serve.
