Core the apples using an apple corer and cut them in half, then slice them into very thin wedges.
Place the apple slices into a skillet over medium heat to soften them slightly, stirring for about 4 minutes until they are pliable but not limp.
Transfer the softened apples into a bowl to stop the cooking process and cool them down.
On a clean work surface, sprinkle about 1 tablespoon of flour and roll out one sheet of puff pastry into a rectangular shape, cutting off the rough edges with a pizza cutter.
Heat 3 tablespoons of apricot preserves in the microwave for about 20 seconds and brush it onto the puff pastry strip.
Place the apple slices on the strip with the red skin facing outward, overlapping them halfway on the dough.
Fold the outside edge of the dough over the apples, covering them halfway, and brush the edge with a beaten egg white.
Loosely roll the pastry from one end to the other, tucking in the apples as you go, and pinch the back piece to seal it.
Mix 1 tablespoon of ground cinnamon with 1/4 cup of sugar and sprinkle it on top of the rolled apple blossom.
Place the apple blossom into a muffin tin that has been sprayed with non-stick cooking spray.
Repeat the process until all apple slices are used, yielding about 9 apple blossoms from 3 apples.
Preheat the oven to 375°F (190°C) and bake the apple blossoms for 40 to 45 minutes until golden brown and the dough is cooked through.
Remove the apple blossoms from the oven, let them cool slightly, and dust with powdered sugar before serving.
