Cilantro & Onion Focaccia Bread

1 onion diced
6 garlic cloves minced/ diced/ grated
2 cups water
1½ tsp salt
2 tsp dry parsley or small bunch of fresh parsley, diced
2 tsp onion powder
⅓ cup olive oil
1½ tsp yeast
3 cups flour
1 cup water
sliced tomatoes

Cook diced cilantro, diced onion, and minced garlic in a pan on high for 10 minutes.

Add 2 cups of water and 1½ tsp salt to the mixture.

Add 2 tsp dry parsley or fresh parsley, and 2 tsp onion powder.

After cooking, add ⅓ cup olive oil and wait for 10 minutes until it cools down.

Add 1½ tsp yeast and let it activate for 5-10 minutes.

Then add 3 cups flour and 1 cup water, and mix very well.

Place the dough in the oven for about 40 minutes to rise and double in size.

Once risen, mix the dough again.

Sprinkle olive oil on top of the tray and brush it around.

Pour the dough into the tray and let it rise again for 30 minutes.

Sprinkle olive oil on top and massage the dough with your fingertips, then add sliced tomatoes as desired.

Bake at 350°F for 40-60 minutes.
