Balsamic Chicken

2 chicken breasts

1/3 cup balsamic vinegar
3/4 cup chicken broth
1 bay leaf
1/2 teaspoon thyme
3 tablespoons butter

Cut 2 chicken breasts into 4 thinly sliced fillets.

Season both sides of the chicken fillets with salt and pepper.

Heat a skillet and add a few tablespoons of olive oil.

Place the seasoned chicken fillets into the heated skillet and fry until both sides are golden brown.

Remove the chicken fillets from the skillet and set them aside.

Add 8 cloves of garlic (sliced or crushed) to the skillet and fry.

Add mushrooms to the skillet and fry for about 1 to 2 minutes.

Measure out 1/3 cup of balsamic vinegar and add it to the skillet.

Add 3/4 cup of chicken broth, 1 bay leaf, and 1/2 teaspoon of thyme to the skillet.

Nestle the chicken fillets back into the liquid in the skillet.

Add 3 tablespoons of cut-up butter to the skillet.

Bring the mixture to a boil on medium-high heat and let it boil for about 5 to 7 minutes until the liquid reduces into a rich brown sauce.

Top the dish with fresh parsley before serving.
